Everything that grows in our environment has its place and purpose, be it edible, medicinal, practical or poisonous. From the roots in the earth on which we stand, to the leaves of the trees above us, nature provides a spectacular and varied bounty, just waiting to be discovered by all. Meeting at Innish Beg Holiday Cottages and Yoga Centre, just past Lough Erne Resort, this unhurried tour explores lush and fertile farmland nestled on the shores of Fermanagh’s famous lake-lands. We take in woodland, pasture and lakeshore, all of which offer a plethora of seasonal produce for us to harvest and prepare. The terrain is predominantly on the flat, with paved surfaces suitable for all levels of mobility. This pristine space, with its clear air, clean water and unpolluted by-ways is a forager’s paradise. In addition to discovering and discussing the flora and fauna that we find, the tour concludes with a cooking demonstration in one of the Centre’s kitchens, and offers a unique opportunity to taste and explore new and unexpected flavours, using seasonally available ingredients foraged by us along the way.
